This origin is from a small town in Kelantan called Temangan. Located along the Kelantan River, this origin has a bright, popping flavor profile.

 

From the lush riverside town of Temangan in Kelantan, this chocolate originates from a region steeped in agricultural tradition and known for its deep connection to the Kelantan River, which flows past smallholder farms and nourishes the land. Once a railway hub during the British colonial era, Temangan is now better known for its quiet resilience yet its reputation is steadily growing in Malaysia’s fine cacao scene.

The cacao here is fermented by the same hands who won the 2021 COE awards, in small batches for 4–5 days, using traditional wooden box fermentation with two turns, a method that brings out its bright acidity and light tropical fruit notes. After fermentation, the beans are sun-dried for 6–10 days in a greenhouse on drying tables, ensuring clean, consistent flavor development while protecting the beans from erratic weather.

Beans are traditionally fermented between 4-5 days with 2 turns, in wooden boxes, then sundried between 6-10 days in a green house. 

This 67% chocolate retains Temangan’s signature lively profile due to its delicate roast — making it ideal in flake form for melting into a memorable drinking chocolate. It is currently the brightest origin that we have in hand.
